long time no blog

I'm so sorry, ya'll... I know I have been neglecting you. It's been so difficult to find time to get on my real computer, as opposed to the Nook. I plan to make it up to you, though. With my favorite new dinner. It's yummy, and has a decent calorie count. Fajitas! They can be so easily tailored to suit your taste/calorie goals. I use plain, nonfat greek yogurt instead of sour cream, and it's identical. So, first things first, you want to use the kind of tortillas you have to fry up yourself. Trust me, worth the effort. DSC02673 These are what you're looking for, though I've used several brands with the same yummy results. The other ingredients... cast of characters, so to speak. We use orange, yellow, and red bell peppers. To me, these give a much better flavor than green bell peppers. Of course, this is subjective, and easily changed to suit your taste buds :) DSC02671 We also use coconut oil to sauté the chicken, and to fry the tortillas. DSC02670 DSC02675 Doesn't that look amazing? It is. We have it once a week, at least. Also, with the leftovers I have made casseroles and soups... super yum. As far as marinating the chicken, I have used several variations of lime juice/chili powder/cumin combo. It's hard to screw up. Also, I'm not a great cook, so if I can make it yummy, so can you :) -C

  1. MMMM, yum!! I think I need to put this on the menu next week. If you use corn tortillas, it's gluten free, too! :)
